Saturday October 10 Sassari puts its food culture centre stage with a programme combining discussion, cooking and conviviality. The morning begins at 9:30 with the roundtable “Identity in the kitchen: food traditions as a driver of tourism destinations” at Palazzo di Città. The discussion, organised by CCN Stelle del Centro and Incentru Sassari as part of the L’identità in vetrina project, explores the relationship between gastronomy, production chains, history, education and tourism.

The meeting will be chaired by Giuseppe Melis and Jessica Cani. Guests include chef Fabio Zago, food writer Giovanni Fancello, historian Paolo Cau, lecturer and consultant Gianluigi Tiddia, producers Agnese Cabigliera, Giacomo Manca and Gian Piero Saccu, as well as Elena Cornalis. Participation in the roundtable is free, with registration via the project’s social media channels.

From the live cooking demonstration to the street party

From 1 p.m. in the courtyard of Palazzo Ducale, Fabio Zago and chef Pietro Canu will cook with students from the hospitality school. Lunch and tastings are offered with limited places; the organisers have set the combined ticket price at 60 euros. In the evening, from 6:30 p.m., the A fora li brasgeri roast feast will bring the historic centre to life: the third edition is organised by the Municipality of Sassari in partnership with the Eat&Buffas association and involves around one hundred operators from the city’s social clubs.

  • Ten stations across nine locations make up two routes, red and blue, passing through Piazza San Donato, Pozzu di Bidda, Piazza Quadrato Frasso, Piazza della Frumentaria, Piazza della Stazione, Vicolo delle Campane, Piazza Pescheria and Piazza Duomo, as well as the open space in front of the former Bar Aroni.
  • Grilled dishes include zimino, capocollo, vegetables, pancetta, horse meat, salsiccione and roasted lumaconi. The routes offer the chance to sample five dishes, served with bread and a glass of wine at each stop.
  • The ticket for the roast feast costs 15 euros. Tickets are on sale at the stand in Piazza Azuni on Friday, October 9 and Saturday, October 10; buyers choose one of the two routes.
  • The celebration continues with Sassarese music: Sintonia, Sassari Vecciu and Mauro Galleri will perform in Piazza Azuni; Zeppara and Cantendi Sassari are scheduled at Porta Sant’Antonio.
